200 g semi-mature Piave PDO cut into strips
100 g Trevisan chicory
2 large oranges
2 grapefruits
3 tablespoons of orange juice
1 tablespoon of shelled almonds
extra virgin olive oil
salt and pepper to taste.
Preparation time: 15 min
Peel the citrus fruits to the pulp and cut into wedges. Wash the chicory, cut it and place it on the plate with the segments of citrus fruits, then add the Piave Mezzano PDO and almonds chopped into strips. Prepare the sauce with orange juice, three pinches of salt, a pinch of pepper and oil in a bowl. Emulsify everything very well and serve on the side.
