200 g Asiago Stagionato PDO
20 g shallot
20 g celery
Meat broth to taste
Thyme, marjoram, rosemary
extra virgin olive oil
salt to taste

 

Preparation time: 10 min

Cooking time: 10 min

Prepare the beef and/or chicken meat broth. Degrease by skimming the fat off the top. Roast the vegetables in a little extra virgin olive oil. Add the herbs and add the Asiago Stagionato  PDO cut into pieces, and the broth to taste. Blend and strain chinois style or using a thick mesh colander. Heat and serve.
