Carnaroli rice whipped with Montasio and Franciacorta

800 g Carnaroli rice
200 g butter
50 g cream
200g fresh Montasio PDO
100 g Grana Padano PDO
½ l sparkling Franciacorta
salt to taste
5 l vegetable broth
3 slices fresh Asiago PDO
paprika to taste
oil to taste
Preparation time: 10 min
Cooking time: 20 min
Toast the rice in a saucepan with a drizzle of oil and a pinch of salt. Once the rice is very hot soak with a little boiling broth at a time and add a knob of butter. When it is half cooked add the cream and spray with some of the sparkling wine. At ¾ of total cooking time, add the diced Montasio Fresco PDO. Stir in butter, Grana Padano PDO and the remaining sparkling wine.
Place the Asiago Fresco PDO cut into a triangle (with a wafer form 4 triangles) on a silt pad and sprinkle with paprika. Bake in a microwave oven at full power for 2 minutes and 20 seconds. Serve hot garnished with a sprinkle of fresh Asiago with paprika.
