Manioc cake - Zanzibar

400 g peeled and diced manioc 
250 g grated Grana Padano PDO
2 carrots
60 ml of milk
30 g di margarine
salt and pepper to taste 
1 sprig of fresh parsley

Preparation time: 10 min

Cooking time: 35 min (30 min for manioc and 5 min for the cake in the oven)

Boil the manioc in salted water for 30 minutes. Drain it and put it in a bowl. In the meantime cook the round slices of carrots and drain well. Add milk and margarine to the cooked manioc and crush with a fork. Mix with Grana Padano cheese (set aside 4 tablespoonfuls).
Grease a baking dish and pour the mixture into it. Sprinkle with the cheese left aside and decorate with slices of carrot. Place the cake in the oven for a few minutes until the cheese melts. Decorate with chopped parsley and serve warm.
