200 g Mature Asiago
170 g fresh Asiago
125 g cream
25 g flour
50 g butter
2 eggs
100 g shallot
100 g celery
50 g carrots
chicken broth, garlic,
rosemary, bay leaf, thyme, olive oil, salt

Cooking time: 15 min
Take two eggs and separate the egg whites from the yolks. Beat the egg yolks together with the butter and the flour in a bowl. Beat the egg whites with a whisk or in a blender. Melt the cream with the diced Asiago Fresco PDO in a saucepan.
At this point mix everything together, and after having mixed the ingredients thoroughly, toss them in an iron mould to be placed in the middle of the oven preheated at 180° for 15 minutes. Prepare a sauce while the flan bakes in the oven: wither the shallot, celery, and carrots with olive oil and aromatic herbs.
Finally mix the broth with the grated Asiago Stagionato PDO and blend. Serve the flan hot with the sauce and, if possible, with flakes of truffle.
